We bottled 300 cases of our 2007 Rosemary’s Block Sauvignon Blanc on Valentines day of 2008 and Russell and Marie both think this effort is as good if not better than 2006. The 2007 has all the power, roundness and acidity of the 2006 but with notes of passion fruit and pineapple. We anticipate that the Sauvignon Blanc will go quickly so don't dawdle.
Aged for 4 months in 50% stainless steel and 50% oak of which 20% was a beautiful new light toast Ermitage barrel, this wine is at once delicate and powerful.
To preserve the delicate character of the wine, it was bottled unfiltered with a minimum of sulfer. This wine should be properly stored and benefits from exposure to air before serving. |
